I ordered a 4 egg poacher so we will be able to do 8 at a time, or staggered time.

20 degrees and ice/snow outside today...looking forward to summer and Ouray!

Eggcelent! I think we will go staggered. We will get 4 out every 2 1/2 minutes. Right now we are looking at making about 24. That's six batches, 3 each. We can get them all done in about 15 minutes. That's pretty quick. Casey will have to try to keep up with the toasting!

Casey can hand out the toasted muffins, we will have a warming dish with the Canadian bacon so folks can put their own bacon on. You and I can plop the eggs on top and then they can put the sauce on themselves as well. It should go pretty smooth.

Last year it took probably an hour to get it all done. I poached over two dozen eggs.

Yeah, I don't want to poach his joke but you know how much of a ham I am. But I do like the idea of the assembly line. It's eggsactly what we should do to get people through the line faster. But I think if I keep up the puns I'm toast.

And maybe we should serve these on hubcaps. After all, there's no plate like chrome for the hollandaise.

Everyone... I made some hollandaise sauce and then put it in the fridge. I then used my 'hot logic' warmer to, well, warm it back up. It turned out great. Thick but warm. I like the sauce a bit thicker so it sticks. I also warmed up the Canadian bacon using the hot logic and it turned out good. I can see where it might get a bit too dry but if we are moving things along it won't be an issue. I think we are about to take this to the next level.

Sounds like the plan is coming together! I think its already to the next level! The extra poacher arrived...just need to remember to pack it!

All right, got the hollandaise sauce made. It wasn't without a bit of drama but we are good. I am going to refrigerate it over night and then reheat it in the morning using a 'hot logic'. Don't worry kids, I tried this at home.
