I picked up a fresh 12lb turkey. It was the biggest one they had. I am not really sure how many people are showing up but we will make it work. Food is never an issue.

This will be a first for me. I've never dressed and cooked a Turkey before. Should be interesting.

okay. I read a few recipes and got some ideas on how to 'prep' the Turkey. It's my first attempt so it should be interesting. I decided to go with a 'dry brine' with some salt, pepper, all spice and just a hint of cayenne pepper. When I say I 'hint' I mean it. Maybe a 1/4 teaspoon.
Following the recipe I loosened the skin from the meat and then massaged the rub between the skin and meat. Some more mixture in the cavity and the leftover I rubbed over the skin of the bird.

Tomorrow when I am packing up I will rub the mixture around again.

I am going to start the bird a bit early on Saturday. You may recall last year Chris had cooked it in the morning and met me in Florence around noon.
I used a hot logic to keep the Turkey warm after carving and it was pretty yummy.

So I plan to go with the same basic logic, start the bird a little early, probably around noon. Let it rest after cooking. Carve and then keep it warm with the hot logic with some of the juices keeping it moist.

We'll see. I am a bit nervous but I also know there is lots of other great food to eat.

Hey Tim:

Carol & I will be out Friday afternoon. We'll be making a mushroom risotto for the side dish. I think Carol will make some Asian meatballs for a pre-dinner snack. As we've done for the past few years, Friday night we'll be making a pot of potato soup to share. We'll have disposable bowls and spoons. I'll bring a table. I have a semi large bottle of hand sanitizer I can put on the food table so folks can clean hands before getting food.

So I am not sure if Martin is coming (he usually does the ham), as such Kristen and I will bring out a spiral cut ham, and King's Hawaiian rolls too for dinner. Looking forward to it!

Thanks Flint!

It was a very nice time shared with some very nice people. The weather was close to perfect, a bit warm in the sun but cool with a slight breeze in the shade. Not too many bugs bothering us either. Night time temps were awesome. Cool enough for a decent fire but not so cold that it was uncomfortable in the tent.

A decent size group, maybe about 20 or so. Just a hand full of FSJ's.

A great food spread, even with our classic lack of organization we still had all of the bases covered and then some! No one left hungry. I know because I offered to make up some cheese crisps later Saturday night and I couldn't get any takers.

A big thanks to everyone for pitching in and making it a great get away. It was nice to be separated from some of the madness that is 2020 for a couple of days. TITD is one of those things I always look forward to and am always happy I was part of. You folks are awesome.

It did turn out very well, great weather to camp and to have a fire. Everything came together just fine. I had a great time.

This guy has a channel on youtube. He made a Thanksgiving dinner out camping using dutch ovens.

It's a long watch. He has some good ideas on Dutch oven cooking. He uses bacon (for the bird) and tortilla (for the baking) to keep from burning the bottom of the food.

His channel is normally firearms related. It's a good channel and he's actually a bit entertaining.
